Banana Spinach Pancakes

Steps

  1. Put all dry ingredients into a food processor or blender. The oats should turn into flour like consistancy. Pour into a medium bowl and set aside.

  2. Blend together spinach, banana, milk, oil, eggs, and Baking soda and ACV, maple syrup in the blender. Blend until mixture is very smooth.

  3. Pour oat mixture into the blender. Blend until well combined and batter is smooth. 

  4. Heat a skillet over medium-low heat and add a little oil. 

  5. Cook until bubbles form on the pancake, approx 2 mins. Flip the other side and cook for another few minutes until done.

  6. Serve with nut butters, variety of fruit and maple syrup. 

How to make

Ingredients

  • 2 x cups rolled Gluten free oats ( I  use naked organic brand)

  • 1/2 tsp baking soda 

  • 1/4 tsp of Apple cider vinegar ( or 2 x tsp baking powder )

  • 1 tsp cinnamon

  • pinch of salt

  • 2 x eggs

  • 1/4 cup of GF oat milk ( or rice, almond milk)

  • 1 cup ripe banana ( about 2 x medium )

  • 2 x tablespoons Maple Syrup

  • 2 x tablespoon Coconut oil 

  • Handful of baby spinach ( well washed)
