Blend the egg, maple syrup, banana, red lentils, oilive oil, apple cider vinegar, oat milk, grated carrots, and vanilla in a food processor.
In a separate bowl combine the flour, baking powder, baking soda, salt and cinnamon until combined.
Pour the contents of the blender into your dry ingredients and stir until just combined without over mixing.
In a medium size pan or skillet, heat a little oil on it until hot.
Pour equal sized pancakes and flip once bubbles begin to form for approx 2-3 minutes on each side until browned.
Serve warm with additional fruit, nut butters, coconut yoghurt.

1 cup mashed banana
½ cup cooked red lentil – (1/4 cup uncooked)
3 tablespoons olive oil
2 teaspoons apple cider vinegar
1/4 cup oat milk
1 medium carrot
1 tsp vanilla essense
1 1/2 cups sweet rice flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tsp ground cinnamon
