Steps
Place mango chunks, lime juice, water and maple syrup if using into a sauscepan until it begins to simmer. Stir occasionally.
Blend the mixture in a blender or food processor until smooth. ( I find the nutria bullet the best for this. mango chunks & lime & maple syrup in a blender).
Let it cool for about 10 minutes before adding the gelatin powder and then blend again.
Pour the mixture into your silicone molds and put in the refrigerator for about an hour.

1 x large ripe mango
4 tbsp gelatin powder ( I use Great Lakes Gelatin)
1/3 cup water
¼ lime juice
1 Tbsp maple syrup ( leave out for babies)
