Slow Roast Leg of Lamb

Steps

  1. Preheat oven to 140 C

  2. Season lamb with salt and pepper

  3. In a large cast iron pan or oven dish heat the olive oil or ghee and borwn the meat for 10 minutes

  4. Add all the remaining vegetables and stock into the pot with the lamb

  5. Put the pot in the oven to cook for between 6-8 hours ( 6 typically for fan oven)

  6. Serve with side of brussel sprouts and roasted potatoes or mashed potatoes


How to make

Ingredients

1 leg of lamb

1 x large onion

2 x carrots

1 stick celery

1 whole garlic head

1 tablespoon olive oil / ghee

Few sprigs of rosemary 

2 cups chicken stock or broth

salt and pepper
