Introduction

Vegetable Paella

Steps

1. Fry everything in oil in a large flat frying pan (like the start of risotto). 

2. Cover with bone broth and continue to add water as needed.

3. Cook on low until it is all absorbed.  

4. Continue to top up with bone broth or veg broth until the rice is fully cooked. 

5. No need to stir.

6. Can serve with sprinkles of manchego cheese if tolerated or sprinkle dulse flakes

How to make

Ingredients

1 1/2 cup of any short grained rice (arborio)

2 x cloves garlic

1 small onion

1/2 leak

1/2 head of broccoli

Hand full of spinach

Half palm of chopped Coriander

Parsley to garnish

Pinch of coriander powder 

Pinch of smoked paprika powder

Pinch of nutritional yeast

All spice/pimento 

saffron ( can add a tiny pinch)

Pinch of sea salt 

1 cup of bone broth or vegetable broth ( see my other recipes) and continue to add water for rest.
